True Love



How was your weekend? Mine was fun! Our cousin visited us for the weekend and my friend from law school came by for a photo session. We all hung out and had a great time. My cousin wanted a card for his wife, so I made this one. He liked it without a sentiment and I agreed that the card said enough by itself. I intended to join in on the PTI blog hop on Saturday, but we got a bit carried away with time and well...I forgot!

So, I'm gearing up for Orlando this weekend. Can Thursday get here fast enough? NOPE!

I made some Clam Chowder Soup last night and I enjoyed it, so I thought I'd share just in case you don't have a recipe. Please share any variations if you have any!

Ingredients
  • bacon/bacon bits (2 slices or a handful of cooked bacon bits from salad aisle)
  • onion (diced - medium size)
  • large potato (diced - about a cup or so depending on how many potatoes you like)
  • chopped clams (4-6.5 oz. cans - located near canned tuna at your local grocer)
  • clam juice (1 bottle - optional - located near canned clams)
  • heavy whipping cream (1 cup)
  • cream of celery soup (2 cans)
  • pepper (to taste)
Directions
  1. Cook bacon and chop (if using fresh bacon), then add onion and saute.
  2. Add clam juice from canned clams (or use bottled clam juice).
  3. Add potatoes and cook until tender.
  4. Add clams, heavy whipping cream, cream of celery soup, (and bacon bits if already cooked).
  5. Cook until thickened. If too soupy, add a thickner, such as corn starch or flour.
  6. Add pepper to taste.
Yields about 4-5 bowls.

Card Instructions
  1. Trim hibiscus burst cardstock to an A2 card.
  2. Trim vintage cream cardstock and stamp text.
  3. Adhere to card front and stitch.
  4. Stamp flowers (three times for the dimensional layers) + leaves, cut out and adhere to card front using foam adhesive.
  5. Add ribbon.

Card Size: 4.25" x 5.5"

wow, very pretty, the more I see people use the In Bloom stamps the more I want! You did a mighty fine job at that ribbon! Not forgetting to mention, a very romantic feel to the card!

HI Ashley, This is my first time writing on your blog! I found you through SCS and see that you are a big fan of my dear friend Dawn McVey! What a sweetie right! So, I HAD to post about a clam "chowda"! My hubby loves clam chowder and I snagged this recipe from our fav seafood restaurant, Mitchell's Fish Market. So here it is! Enjoy! (Just don't count calories while making it! LOL!) Btw, Love love love ur cards, gor-ge-ous!

½ cup unsalted butter
½ cup flour
¼ cup celery, diced small
½ cup white onion, diced small
1 Tbsp. unsalted butter
3 cups clam juice
12 oz. chopped canned clams (with juice)
½ lb. Idaho potatoes, skinned & diced ½”
2 cups Heavy cream
¾ White pepper, ground
1 Tbsp. Kosher salt

In a medium sized saucepan melt ½ cup butter. Once it is melted add flour to form a roux. Cook roux for 10 to 15 minutes on low heat. Do not brown. Remove from heat and reserve. Sauté 1 Tbsp. of butter in a pot over medium heat. Add celery and onions and sweat until translucent (about 5 minutes). Add clam juice and chopped clams and bring to a boil. Slowly whisk in prepared roux. Be careful not to add to fast to prevent lumps. Bring soup back to a boil and cook for 5 minutes. While chowder is cooking blanch potatoes in a separate pan until tender, then drain. Add cooked potatoes and heavy cream and season with white pepper and kosher salt. Simmer for another 5 to 10 minutes to incorporate flavors. Yield: 8 cups
